4 salmon fillets,
Juice and rind of 1 orange,
4 tablespoons of cointreau,
2 tablespoons butter,
1 tablespoon honey,
1 teaspoon cinnamon,
Freshly ground black pepper.


Melt butter in a large pan over medium-high heat. Add the salmon season with salt and pepper and sauté on each side for a couple of minutes. Transfer salmon to a plate, cover, and keep warm.
Turn heat to high, and the cointreau, stir in the orange juice and the honey and cook for a couple of minutes or until sauce slightly thickened.
Put the salmon back in pan and simmer for a couple of minutes so that it absorbs the sauce. Sprinkle the cinnamon and orange rind and serve with salad.
