(for an egg free version)

500 ml water,
250 gr sifted flour,
1 tablespoon salt,
1 tablespoon olive oil,
Oil for frying,
Sugar and cinnamon to sprinkle.

Preparation

In a medium saucepan, combine water, 1 tablespoon oil, and salt. Bring to a boil. Add the flour and immediately turn heat to low; stir constantly until a ball of dough forms. Remove from heat and allow to cool. When dough can be handled, place it in a pastry bag or cake decorator with a fluted tip; press the dough into 8cm strips. In a skillet, heat vegetable oil until very hot. Reduce heat to medium and fry the churros until they begin to turn golden brown, about 2 minutes, on each side (turn them if necessary while frying). As churros are done place on paper towels to drain.

Roll warm churros in sugar mixed with cinnamon and serve with hot chocolate.
