5 big carrots – diced,
1 large onion – chopped,
300ml vegetable stock,
Juice and grated rind of 1 orange,
Salt and black pepper,
Olive oil,
Chopped fresh chives – chopped.


In a pan heat olive oil, add the chopped onion and carrots, cook on a medium heat for 10 minutes or until tender. Add the vegetable stock, orange juice and zest, lower the heat, cover the pan and cook for 10-15 minutes. Blend the soup until smooth. Add vegetable stock if necessary. Serve with chopped chives on top.

For 4 persons.
