Lemon Mint VinaigretteIngredients:

100ml fresh lemon juice,
1 tablespoon Dijon mustard,
1 teaspoon sugar,
1 clove garlic,
100ml extra virgin olive oil,
5 tablespoons chopped fresh mint,
Salt and fresh ground pepper.

Preparation:

Whisk the lemon juice, mustard, sugar and minced garlic in a small bowl. Slowly add the olive oil, and whisking with a fork so that the ingredients blend well. Stir in mint and set aside for a couple of minutes, season with salt and pepper.

This dressing may be kept refrigerated for up to 2 days.

For 4 persons.
