Juice of 4 lemons,
150 gr caster sugar,
1/2 egg white,
1 tablespoon Elderflower cordial*,
600 ml water,
Prosecco white wine,
Serve with Blackcurrants or other fruits.

Preparation:

Place the caster sugar in a saucepan with water and dissolve over a low heat, then simmer for 3 to 5 minutes until you have a very light syrup. Allow the syrup to cool and stir through the lemon juice and cordial, afterwards freeze in a container. When frozen, allow to defrost to break it up in chunks and place in a food processor with the egg white. Whizz until smooth and freeze again. Serve immediately on a plate or glass bowl topped up with Prosecco wine and blackcurrants.

*Elderflower cordial is a soft drink made largely from a refined sugar and water solution and uses the flowers of the elderberry, also called the sambucus nigra.
