8 large flour tortillas,
2 chicken breast cut in small cubes,

4 tablespoon olive oil,
1 onion finely sliced,
1 red pepper – deseeded and finely sliced,
1 green pepper – deseeded and finely sliced,
4 garlic cloves – finely chopped,
Lemon juice,
2 teaspoon cayenne pepper,

2 teaspoon paprika,
Tabasco sauce,
Salt and freshly ground black pepper,
100 gr strong cheddar – grated,
2 avocado – peeled and sliced or fresh salad for serving.


Start by heating the oil in a frying pan, then add onion and stir around for 1 minute, afterwards add peppers and cook for a couple of minutes. Add chicken and garlic and stir-fry till coked, about 10 minutes. Stir through lemon juice, cayenne pepper and paprika, add plenty of freshly ground black pepper and a pinch of salt.

In a large frying pan add a tortilla and spoon the chicken mixture on top with grated cheddar and cover with another tortilla. Cook for about 1 minute till tortilla turns golden and flip over and cook for another minute. Slice and serve with Tabasco sauce and avocado slices or fresh salad.
