Mary soup


175 gr ripe tomatoes,
510 ml carton fresh tomato juice,
1 tablespoon Worcestershire sauce,
1 tablespoon balsamic vinegar,
Juice of 1 lime,
4 drops Tabasco sauce,
1 teaspoon olive oil,
Salt and freshly milled black pepper.


Place the tomatoes in a bowl, pour boiling water over them, leave to soak for a couple of minutes. Remove from the water and carefully slip off the skins. Chop the tomatoes very finely or blend them roughly. Heat 1 teaspoon of olive oil in a medium-sized saucepan. Toss the tomatoes and simmer for about 3 minutes.

Pour in the tomato juice and the rest of the ingredients and season with salt and pepper. Check the seasoning, add more if needed. Bring the soup back up to simmering point.

Serve soup straight away. Decorated with a swirl of Greek yoghurt.
