MOKAPINK-Cold-yogurt-soupIngredients:

2 large cucumbers,
5 natural yogurt pots,
Bunch of spring onions,
Minced dill,
Dash if lemon juice,
Salt and pepper.

Preparation:

Peel the cucumbers, remove the seeds and chop finely. Toss in a bowl and sprinkle with salt. Put in the fridge and leave aside for at least 15 minutes. Transfer the yogurts to a glass bowl and put in the freezer for 10 minutes. Remove the cucumbers form the fridge and drain them well, squeeze them very tightly in your hands. Put the drained cucumbers in a blender; add the yogurts and minced spring onions and dill. Blend until all ingredients are well combined and creamy, season with salt and pepper, add a dash of lemon juice, and blend again. Serve chilled.

For 4 persons.
