12 chicken drumsticks ,
Finely grated zest and juice of 2 lemons,
4 tablespoons chopped fresh thyme leaves,
4 garlic cloves minced,
5 tablespoons extra-virgin olive oil,
Half a glass of white wine,
Coarse salt and freshly ground black pepper.


Wash the drumsticks and dry them well, removing any excess fat if necessary. Put all the ingredients except the chicken in a dish, mix melt and then add the drumstick, coat them well. Set aside, leaving them to marinate for a minimum of 30 minutes.

In the meantime preheat the oven to 250°c degrees.  Remove drumsticks from marinade and place them in a baking dish, season with salt and pepper and some more thyme. Bake for 45-55 minutes, or until the juices run clear.  To enhance the flavours, whilst cooking, every now and then brush the drumsticks with more of the marinade. Serve immediately.
