Cream broccoli ricotta semolinaIngredients:

100 gr broccoli florettes,
20 gr leeks,
20 gr semolina,
20 gr fresh ricotta cheese,
Olive oil,
150 ml broth (you may simply use water).

Preparation:

Wash and cut the broccoli florettes, mince the leeks. Heat 1 table spoon of olive oil in a pan and add the leeks and broccoli, cook until tender. In another pan add the semolina and the broth and cook for approximately 15 mins or until the semolina is well done and will have absorbed all the liquids. Puree with the help of a mixer the broccoli and leeks, then add the semolina and ricotta cheese, combine well all the ingredients. Serve immediately.
