125 gr cream cheese (I use Philadelphia cheese),
225 gr berries,
200 gr biscuits,
50 gr icing sugar,
40 gr butter,
7 gr gelatin,
1 dl of whipping cream,
Vanilla essence,
Zest of 1 lemon.


To prepare the crust, first melt the butter on very low heat, finely crush the biscuits in a food processor and then add the butter to the biscuits. Pour the mixture in a spring-form pan, press with your fingers to obtain a uniform layer. Set aside and leave to cool in the fridge.

In the meantime, mix the cream cheese together with the lemon zest, vanilla essence and the icing sugar. Melt over low heat in a pan filled with some cold water the gelatin, once melted add to the cream cheese mixture and combine well.

In a chilled bowl, beat the whipping cream until soft peaks form. Slowly add the whipped cream into the cream cheese mixture. Spoon filling mixture into biscuit crust. Chill for 6 hours, before serving remove the cheesecake form the spring form and top with the berries.
