4 egg yolks,
100 gr caster sugar,
25 gr plain flour – sifted,
1 vanilla pod, with a line scored down the side, or 1/2 tsp vanilla extract,
250 ml milk.


Put the milk and vanilla pods in a pan and warm over a low heat. In a mixing bowl, whisk together the egg yolks and flour. Stir in a little of the warm milk to dilute the egg mixture, then pour the mixture back into the pan. Cook, stirring, over a gentle heat until thickened. Remove from the heat and leave to cool.

For 4 persons.
