225 gr Butter,
3 medium garlic cloves,
2 teaspoons finely minced parsley,
Toasted slices of baguette.
In a large bowl work the butter with the help of a fork until it is slightly soft. Using a garlic press, crush the gloves and add to the butter. Mix well. Work in the chopped parsley. Alternatively add all the ingredients in a food processor and blend for a couple of seconds making sure that the butter remains firm. Taste the butter and add garlic if you want a more pungent flavour.
Form into a sausage shape, wrap in cling film and refrigerate until firm. The butter can also be stored in the freezer and sliced when needed. Spread the butter onto the toasted slices of baguette. Serve immediately.
Apart from spreading the butter over toasted bread, garlic butter can be used to enhance many dishes including, fish, poultry, seafood, pasta, potatoes and other grilled vegetables.
