4 large eggs,
3 tbsp black olives,
100gr crumbled feta cheese,
Salt and pepper,
In a bowl lightly beat the eggs, season with salt and pepper and set aside. Heat 1 tbsp of olive oil in a 12cm non stick pan, thinly slice the onion and cook them over medium heat until tender. Leave to cool, in the meantime slice the tomatoes and set aside, crumble the feta, chop the fresh basil, and deseed the olives.
Add the onions and black olive to the eggs and mix well.
Pour 1 ladle of the egg mixture in the non stick pan, cook over medium heat, once the omelette is set cook the other side, once almost set add the tomatoes slices on top, the crumbled feta and garnish with the chopped basil.
Repeat till you finish the egg mixture. Serve with salad
